DC has been good about collecting the Vertigo series I've liked, but they are really behind on the post crisis main series.
They are currently or have announced the following series on my want list:
Green Arrow (the Grell series)
Robin
Suicide Squad
The Demon (Ennis run)
Justice League (the Jurgens run)
Icon
The final John Byrne Superman
Azrael
My want list is still pretty long.
Complete the Giffen/DeMatties Justice League run. I think they were less than half way through when it stopped.
The Wally west Flash run beginning with Baron and going through the final Waid issues
Aquaman/Atlantis Chronicles including the Shaun McLaughlin run
The Gerard Jones run on Green Lantern
The Ray by Priest
Justice League Task Force
Anything by Ostrander Firestorm, Manhunter, Hawkworld
The Justice Society by Strazewski and Parobeck
L.E.G.I.O.N
Legion of Super Heroes (5 years later)
Legion of Super Heroes (Zero Hour Reboot)
Superman (post Byrne)

Northlanders book One will collect #1-16, #18-19, #41... so maybe 3 volumes in total?
SMT will collect the first 12 issues.

Not really, no. They also don't have a certain name, like the Epics but they do have enough unifying features to consider it a line imo.

I'm still holding out hope that the Giffen/DeMatties run will be completed. DC had a huge delay in finishing up the Garth Ennis Hitman collections. The John Byrne Man of Steel collections have been sporadic. There will be an over 2 year gap between volume 8 and9 being released. And it was years before they filled in teh gaps in the Hellblazer run with the current volumes coming out.

While I'm super excited for a lot of the upcoming collections, I'd also rather see them complete what they've already started. Most notably:
Ostrander's [I]Martian Manhunter[/I]
Ostrander's [I]The Spectre[/I]
Ostrander's [I]Suicide Squad[/I]
Milligan's [I]Shade, The Changing Man[/I]
Giffen & DeMatteis' [I]Justice League International[/I] (we still need [I]JLA[/I] #36-60 and [I]JLE[/I] #12-36; 4 volumes could do it)
Perez's [I]Wonder Woman[/I] (preferably in omnibus format)
And as was already mentioned, I hope they continue with the recently started lines like [I]Birds of Prey[/I], [I]Nightwing[/I], [I]Robin[/I], and [I]Deathstroke[/I], before they start more that could potentially remain incomplete.

It's not post-Crisis, but I'd love for them to collect [I]All Star Squadron[/I]. Also, [I]Captain Atom[/I]. Not sure if it's any good, but I've always wanted to read it.

It's good. Especially the first few years of the series.
The later issues are still readable, but definitely flounder a bit; this may have been related to the aborted plans for him in [I]Armageddon 2001[/I].

Yes. This, too.
DC seems to be stuck reprinting the Golden and Silver Age Batman stuff with Archives and Chronicles and, now the omnibus. It would be cool if DC would consider collecting Batman/Detective issues from the late 70s to early 90s. There such a wealth of good Batman comics that still hold up in both story and art. We are getting collections per artist, which is awesome.
DCs sweet spot is that early 80s to mid 90s for its DCU and extended a bit into the mid 2000s for Vertigo.

I would be in heaven if they did something like the Epic line.

I'd love to see a nice Batman Bronze Age collection too, starting form about the beginning of the O'Neil era (say 232 or so) until the mid-80s (say Batman 400 or so) including the stories from Detective.
In addition to some of the stuff others have mentioned (much of which I'd love to get)
I'd also like to see collections of some characters who lived as back up features through a lot of the Bronze age-Hawkman, Green Arrow, Atom, Zatanna etc. appearing in various books as back ups such as Action, Detective, World's Finest etc.
A Bronze Age JLA collection would be welcome as well.
A collection of the 1987 Spectre series started by Moench and Gene Colan
a big book collecting the Weirdoverse stuff from the 90s (Scare Tactics, Night Force, Challengers of the Unknown, Books of Fate plus the team up one shot issues featuring the Scare Tactics crew
A nice collection of the original Omega Men stories (including the relevant issues of Green Lantern)
a nice big omnibus collecting all the material from the Amazing World of DC specials-not comics per se but lots of behind the scenes stuff of interest to fans
