Gomez by a mile. He has clearly superhuman reflexes, is much more skilled and is significantly more mobile.
Gomez, for fun, casually hurls Fester across the room so he slams into the wall, turning to grab and throw knives to pin him to said wall while he is still in flight and the last five of which he doesn't even look at as he does it.

I'll admit I've not seen Hook in a long time but I don't think he wants none of what Gomez is.

Hook and Pan were elderly and middle-aged respectively at this point. Sufficient to beat Rufio, a kid with some pluck, sure, but they're not exactly fighters in their prime years.
Like, Peter can fly, sure, but he's not so fast, that just means Gomez will have to take a second to aim.
