Compared to years ago, games are much easier now if anything. Or at least less frustrating. (It may not be that they're easier per se so much as not having to lose ten or twenty minutes of progress every time you die is less frustrating.)
I find modern games far easier.
Predator: Concrete Jungle had no checkpoints and its upgrade system was predicated on finding the one upgrade or two in that level and it didn't have to even be the weapons or upgrades you wanted. Need more health? Too bad, you get a bandolier extension. You screwed up you had to start all over. Also couldn't break animations so you could get injured while using the health pickups or getting more energy for the shoulder canon and cloak.
Modern games are way easier than that.
BTW to the Op's point of RPG's. An RPG is hard because its mechanics are stat tailored. You always want the highest numbers but sometimes you can't for balancing reasons and so you need to optimize playstyles. That's also a good thing to do when you're leveling up. An RPG encourages grinding and so it's always worth it to find the best places to do so.

You don't know hard until you fight your way through a level only to die at the very end. Then you had to start again FROM THE START! No save points.

The invention of "save points" is the best thing that ever happened to gaming

This brings back fond memories of PS2 Shinobi. I love and hated that game so much.
I still find late 90s/early 2000s and mid-era NES to have had the hardest sets of games.

A lot of games had continue codes back in the NES days. But I feel like you still had longer stretches between checkpoints.
I'm not much of gamer but that Warhammer 40k: Deathwing FPS is hard... i play it in easy to chill sometimes but man... Were xenos swarming from everywhere on me at the last mission... :/ So hard....
