If only there were a way to find out... :(

Google and YouTube are failing me :(
Maybe, but I'd bet that the inevitable Doomsday Clock Omnibus that will collect the entire series is where you're guaranteed to find the extras associated with it.

Omnibus is a no no for me from day 1...
It won't really be labelled as an 'omnibus' but a complete series. It's only 12 issues, like the original Watchmen series. I, for sure, am waiting for that 'definitive' hardcover edition of 1-12. There is no need for buying two separate volumes...
It will look nice with my Watchmen HC, Before Watchmen Omnibus and the upcoming Companion (DC Heroes RPG).

Potentially spawn x number of versions of collected editions like Watchmen? :p

I don't think so. Watchmen is a true classic, and with the movie release (and the fact that they want to keep the rights) they did a lot of reprints.
Doomsday Clock will likely have the parts 1 & 2 in hardcovers, then in paperbacks, then the complete series in hardcover and paperback. That's it. I don't think they'll release an Absolute Doomsday Clock, and even if they do, I don't like the Absolute editions.
Before Watchmen got 4 hardcovers, 4 paperbacks and the Omnibus treatment, and I think it's pretty much it.
