Honestly, I don't think she'd find that embarrassing. Emma was big on transparency and she knows better than just about anyone how the mind works. They even had this conversation. Plus I think she said it was just "sometimes" and not every time.

There's a big difference between her having that conversation with Scott and her having it with Kitty. Emma was willing to flaunt her sex life, sure. Her emotional relationship with Scott was something she treated as private and discussed it extremely rarely, if ever with anyone else. She did have a reputation to maintain after all.
I think she was just being realistic.

When written well, one of Emma's traits I like the most is her tendency for avoiding nonsense and not tiptoeing around an issue. She keeps plenty of cards close to her chest but when something is fairly obvious she'd rather not waste time beating around the bush. For Scott to never think of his recently deceased wife during the occasional awkward moment would just be strange and she recognizes that.
