I loved the complexity of the tail end of Silvestri's run/early Jim Lee. Claremont had dozens of characters and subplots going on at the same time and was building towards the Shadow King saga - every issue felt so rich with content and complexity while still delivering character work in spades.
I will be very specific: 1982-1986. Barely a lustrum that I hugely adore, CC at his peak and my ultimate depictions of X-Men by Paul Smith and John Romita Jr. The line-up was also my favorite: Storm, Nightcrawler, Wolverine, Colossus, Rogue, Shadowcat and Phoenix II.
This is the era which has got my heart.

90's to the start of Morrison's run.
Claremont/first Cockrum/Byrne.
Claremont/Lee.
My favorite is when Bendis was in charge-now (only because X-men Red and the solo Jean Grey and Iceman series)
1975-1980 The Wein/Claremont/Cockrum/Byrne run.
1969 The Neal Adams issues
1963-1964 Stan Lee/Jack Kirby first dozen or so issues.
Mutant Massacre to Outback era.
#1: The Claremont era(the whole thing including his work on NM, Excalibur, and the Wolverine solos)
This is the best the franchise ever was. World building, character development, fun adventures.
#2: The Morrison/Claremont era(New X-Men and X-treme)
Morrison brought some interesting new ideas to the table and Claremont came back for some classic beats in a brave new world.
#3: Real World:Westchester (the 90's X-Men/Uncanny/Gen X/X-Force)
This is what was happening when I was first collecting, and had a cohesive feel despite distinct stories happening in each book. Not as exciting as 1/2, but solid.

Felt like dumping 1-3 into a paper shredder and assembling the pieces into a big stupid action movie.
#5: The Original Run
The latter part with Roy and Neal was much, much better, but it's amazing the series lasted long enough for Len, Dave, and Chris to save it.

Uncanny X-Men Vol 1 #297 (February, 1993) - X-Men Vol 2 #113 (June, 2001)
I'd even push that to New X-Men #141 (July, 2003) since that was the last issue before Morrison truly went off the rails. I got in a good 10 years of my initial X-Men golden age. I also loved reading the big crossovers of the 80s, Inferno being my favourite.

I've found that most of the stuff I have came from the 2000s on, however, I follow the X-23 character, not the X-Men in general.

I definitely like the 90's best--best roster.
Defintely the best was claremont from Uncanny 94-209 after mutant massacre it wasnt the same
Second favorite era was Gold and Blue team up to right before AOA. And Gen x a bit after AOA. Many reasons i loved the many distinct teams at this time. How all characters werw somewhere. And i gpt into X-Men during this time.
For me while i like many thongs up to present anything starting with Morrison never was quite the same again
