Dr. Strange was ridiculously strong in infinity war, some powers/feats:

Crimson bands of cyttorak!!
He managed to use the mirror dimension defensively to, to block blasts from the power stone.
and countered what looked like a mini black hole from the space stone.
also has the power to make tons of duplicates

Thanos, a beast in his own right, but this time however, he does not have the space and reality stone to help him fend Strange off.

The Bands should be enough to hold Thanos long enough for Strange to decapitate him via portal like he did Cull Obsidian's hand.

Yea, i'll give him that. Soulstone is out, but it didnt do anything yet anyway so it might as well be out.

Ah that's right. It should still be well within Strange's capabilities. Especially when combined with duplication + Crimson Bands

Strange never used the Bands with duplication, just his normal whips. The bands only ever trapped one hand at a time.
