In a fight, how many TNG era shuttles (from like the Enterprise E) could the NX-01 fight before losing?

Depends on who is in those shuttles, and what class shuttle we're talking about.

If its a average crew member, it might take a few shuttles before the NX-01 is either disabled or destroyed(they had pretty hardy shields and were warp-capable, after all...)

BUT, say we had 3 shuttles against the NX-01 but in those shuttles where:

Shuttle 1: 7 of 9
Shuttle 2: Data and Geordi
Shuttle 3: Depowered Q2, a fully-commissioned Wesley Crusher and a late-series Eecheb

I don't think the NX-01 will last more than a short chase before its crippled, or destroyed.

USS Enterprise NCC-1701-E, Sovereign-class, was depicted as having three different shuttle types. One was the Calypso, the Captain's yacht, one was the Argo, used to ferry an armed ground vehicle. For traditional shuttles it carried Type-11 shuttlecraft, a new but more lightly armed design, the Danube-class runabouts in use seven years prior had photon torpedo launchers as well as phasers. In the hands of a skilled pilot a Type-11 could evade the sensors of a similarly advanced ship. It's entirely possible they could take down the NX-01 without being detected at all.
