In my mind King's X should have been bigger. They blended metal, alt rock, and R+B and pop in an unique way and could have appealed to the same crowd that eat up Faith No More, Jane's Addiction, etc

Trent Reznor and Karen O ( from The Yeah Yeah Yeahs) cover Led Zep
"Funk" cover of ACDC although I'd call it more pop/R+B. Either way I think it's great
however they changed the best line in the song and ruined the pun...
Charles Bradley doing a DEEP soul cover of Black Sabbath's "Changes"
Big Boi from Outkast talking about Kate Bush
To be fair, it's pretty hard not to love Kate Bush.
Not all that well known, but Sephiroth took the genre of dark ambient and gave some of the tracks a fast tribal rhythm to that that's quite awesome:
"I should describe my known nature as tripartite, my interests consisting of three parallel and disassociated groups; a) love of the strange and the fantastic, b) love of abstract truth and scientific logic, c) love of the ancient and the permanent. Sundry combinations of these strains will probably account for my...odd tastes, and eccentricities."
