I'd love to see Code Lyoko get either a real season five where they learn about Project Carthage and find out what happened to Aelita's mother, or a complete franchise reboot, where the girls are allowed to be strong fighters instead of damsels in distress.

Since I've seen both Teen Titans Go! To the Movies & Teen Titans Go! vs. Teen Titans, I now have some newfound appreciation for Teen Titans Go!
But, I'm still hoping for the return of the OG Teen Titans someday. And while waiting, I'll enjoy this weird version of "new teen titans"...

The Spectacular Spider-Man - An obvious one, but this version of Spider-Man got everything essential about the character right. Add to that a stylish art and character design, strong animation, and a talented voice cast and you got one of the best Marvel cartoons. I know it's impossible to bring back, but this thread didn't ask for realism.
Green Lantern: The Animated Series - This was a neat show. I find it a bit overrated, but I liked watching it. The thing is that the plans they had for the following season sounded EXCELLENT and probably would've retroactively improved it. I would've loved a fully villainous Sinestro in particular. Too bad the movie's failure killed it.
Beware the Batman - This is probably my favorite non-DCAU Batman (though I think Brave and the Bold is the stronger show in general) and it's a shame so many people immediately dismissed it. It was very ambitious in its integration of CGI, lesser-known villains, a more involved Alfred, and most importantly, serialized storytelling in a Batman animated show. Again, it was canned because Mattel wanted to do its own toyline instead of the show's. I think another season or two could've changed some opinions around it.
Avengers: Earth's Mightiest Heroes - I was actually kind of okay with letting this one go, but this year, Christopher Yost has been posting his plans for a third season for the show's 10th anniversary and now I'm sad we won't get to see them.
Infinity Train - This series is fantastic and every bit as gripping as any live action sci-fi drama. I can't believe it was HBO Max's fourth most viewed series OVERALL and they're STILL not sure about renewing it.
Glitch Techs - This is another one of those shows that I think is just pretty neat. However, unlike a lot of cancellations, they actually had most of the next season finished (designs, scripts, voice acting, animatics, etc.) and production was suddenly shut down. I can understand how frustrating that is. I don't see why Netflix couldn't have just pulled a Clone Wars like Disney Plus did and finished it up. A lot better than just wasting that money on an unfinished product.
Stretch Armstrong and the Flex Fighters - A very fun re-imagining of the novelty toy as a teen superhero action/adventure series. It starts out a bit cliche at the start, but it leads to some interesting places I'd rather not spoil here. The worldbuilding is also pretty strong. If you missed Spectacular Spider-Man, this is a strong spiritual successor that even shares some of its cast and crew from there.
Seis Manos - A send-up of 1970s exploitation and kung fu movies set in a small Mexican town. Action packed, violent, and a bit cheesy, but fun. I still can't believe Blood of Zeus was renewed and not this series.
It's honestly a very pleasant surprise to see some positive opinions for season 3.

This may not be a popular opinion, but S3 made me evaluate how DC media in general outside of the Arrowverse tries too hard to be either grim-dark or more "adult" (in very immature ways), and how Marvel cartoons of the past 10 years tend to skew a bit too much on the silly side. YJ Season 3 struck me as a proper balance between the two -- serious, but doesn't take itself too darkly, fun without being overly silly, and always staying grounded in the stakes (whether it be a simple truck heist or dealing with the New Gods). In that sense, it's similar in atmosphere to Avengers: EMH, JL/JLU, and X-Men: TAS. Plus, with it being on a new platform, it takes some greater risks without being gratuitous or indulgent.
Plus, Forager is a new fave. I wanna be his friend, too, dammit.
My only consistent complaint is Halo -- spoilers:end of spoilers
since she's immortal, she's the show's go-to for more graphic violence; it's quickly predictable how she's the only one that gets maimed and killed on a regular basis, when everyone else gets tagged just as much as she does, almost bordering on woman of color torture porn. Violet deserves better.

It's funny you mention not being gratuitous or overly-indulgent and then you bring up your consistent complaint .
For me I think YJ is probably the peak of serialized and longform Superhero animation and season 3 kind of brought to the fore both it's best points and its worst points as a series, but I was hooked while watching each batch of episode drops.
The show not being hampered by a traditional channel means that it can do other things like show more physical intimacy, be more upfront about topical concerns (like parental abuse and the complexities of gender and sexuality), exhibit more emotions, and be a bit more liberal about violence and death, especially with the latter's moral implications. But it manages to do most of that without going overboard to try to prove that it's "edgier." It feels more like a natural extension of the previous seasons. What happens to Halo is overdone but it doesn't detract from the other liberties the show can take compared to earlier seasons.
