When he was inside his destroyer armor and had to face those celestials back then. And which Infinity Stones would he have needed? I'm sure he wouldn't need all of the stones, right?

Do you mean when he faced them with the eternal uni mind in the andes?
Given the nature of the gems I would say the power gem and reality gem together would give a win!
But I don't think it would be a quick victory even with them.
Did he face the celestials more than once while in destroyer armor? I'm not too familiar about Odin, but I know he had a weapon called "the sword of 9 realms" when this happened, yet he got beaten quick.
Which gems would be of the least usefulness in a battle against those celestials?
Least useful I say soul gem, I'm not sure they even have them, space gem, they can be anywhere too I think
It would require knowledge and power beyond what someone like Odin could do. For reference, I refer you to Korvac when he absorbed some of Galactus's power cosmic and surveyed Earth. He made contact with the Celestials in South America and wasn't able to do more than minimal telepathic communication with them to determine their intent, despite his power. Their minds were far beyond what he as a fundamental human consciousness could understand. At the time, Korvac's power exceeded Odin's.
Oh, wow. I see.
Even if Odin had the Space, Mind, and Soul stones with him in his encounter with them... all 3 would be of little help then? He'd still lose?
That would be the Odinsword

Beating Celestials is easy peasy nowadays.
J. Jonah Jameson probably has at least one Celestial head mounted over his fireplace.
small drop of Ymir's blood is enough to place you on their level so...
