I like it! And yeah, if they can get through one movie without heavy focus on Magneto, Xavier, Mystique and Wolverine, that could be a neat way of differentiating themselves from the Fox X-Men movies (and also paying some respect for the great jobs done by people like Hugh Jackman, by not trying to immediately stomp all over their definitive versions of those characters).
For that reason, I'd want the initial lineup to focus on characters that got little (or poor) representation in the Fox movies, like Cyclops, Angel, Storm, Beast, Colossus, Iceman, Rogue, Kitty, Psylocke, Nightcrawler, Banshee, etc. Maybe some dark horse surprises like Sunfire or Havok or Dazzler or Jubilee or Longshot. (I feel like Polaris and Thunderbird are being done well on The Gifted, and I'd rather not have multiple versions of them hanging around at the same time. I'd rather they give us something we don't already have.)
For villains, they've got unused gems like Sinister, Selene, Proteus, Master Mold or Bastion, etc. available, if they want to avoid the Magneto trap for awhile. Arguably they haven't had a *good* appearance by the Hellfire Club, Apocalypse or Sentinels yet, but, again, it might be best to show what you can do with what Fox *hasn't* already done, than try to show them up.
Again, wild cards like Sauron or Stryfe or Maddy/the Goblyn Queen are also an option, as well as just straight up crossing the streams (since this will be an MCU X-Men movie and not stuck in some X-ghetto with only X-IP) and using a villain that has crossed paths with the X-Men, but is not generally seen as an 'X-Men villain,' like Doom. (Wouldn't that just set the cat amongst the pigeons, with everyone expecting Doom to appear in an MCU Fantastic Four movie!)

That would still by dividing screen time amongst four additional characters to receive the qualities that can be found in one. You may not like Kitty but she is representation for a large group of people. She's Jewish. From a story telling point of few, if you can have one character fill the role that four would need to then you'd use the one. Beyond her stealthy powers and the diversity she brings, Kitty's also a hacker and a great heroine to introduce for young girls to look up to.
I'm hoping for a Morrison/early Ultimate inspiration for the MCU X-Men, so my ideal team lineup would include:

Jean
Emma
Beast
Storm
Iceman
Kitty (student)
in a school setting, with plenty of cameos from other students like Gentle, Dust, Warpath, Armor, Jubilee, Husk, Monet, Moonstar, etc. No Logan for the time being, I'd introduce him as a sleeper agent/bad guy and have him join the X-Men at the end of their trilogy of films + in time for a crossover.
I would avoid the school being full of background characters at least for the first movie or two. Fox did that and it really served no real purpose other than to just say "hey kids you know that character you like well there they are walking by doing nothing". You start with just a handful of students at first and work your way up.
There are so many stories the X-Men can adapt that it's so hard to pick which cast to choose from. As boring as it sounds I want the O5. And for the sequel I want the Dave Cockrum replacements. After that whatever goes.
If they go with the O5 someone's getting racelifted. For that reason, Storm is a shoo-in.

I honestly would much rather see a black Cyclops than see Storm again. Storm just does not work on screen for me. She shows up throws a few lightning bolts and then gets taken out or sidelined. Her powers just don't lend themselves very well to the big screen. There is nothing about Cyclops that would be changed if he was made black or asian. It might actually add some to his character.

But when you start getting that big letting her go crazy with her powers it kind of renders the rest of the team useless. If they use her as just disaster porn I would rather not see her for a movie or two. I don't want them coming right out of the gate doing monster epic destruction scenes like we saw in Apocalypse.
That's bad writing and design, the screenwriters just have her throwing lightning around. Visually, Storm could be epic. She just hasn't been. As for race-lifting, I'm not bothered. I'd rather it wasn't Jean (redheads are underused themselves and the MCU has already lost red MJ) or Beast (because as soon as he goes furry, what's the point, the diversity would be in name only or a brief glimpse). Cyclops (since he's got a whole legacy of characters to adapt eventually) or Angel (which would look a bit cool) would be awesome. Even Iceman but I just want them to keep him gay, that's his canon diversity. Although, the MCU is doing a spectacularly shitty job on that diversity. As much as I like the movies, they aren't as representative they should be with 20 movies.
A "school" with a handful of students doesn't make any sense. How Fox did it did not hurt anything. The students being in the background showed that it was real school and better yet New Mutants could be the junior class at the school opening up a chance for them to spin off into their own movie. Only late did fox realize what it had in the X-men franchise, People like to throw out the adaptation excuse how they used the X-men they but never saw the value in the linear story of the X-men. They never understood 05,Uncanny,New Mutants, GenX, New X-men and accurately setting up the generations of X-men gave them more toys to play with. The scene in X-2 when soldiers invade the school would have been better if it was the New Mutants around to help wolverine with the younger children.
Regarding Kitty: I buried the lede.
Regarding the student body: the whole gimmick of the the X-Men is that they are a school and teachers.
Regarding Storm: If she's not the center, she's going to get sidelined.
Which is why the next movie should be about Storm struggling to follow Xavier's example as headmistress of the school. That means the "X-Men" are a team of search and rescue operatives, and not vigilantes or mercenaries like certain other superhero teams. Aside from rescuing each other, they should be out rescuing kids. A small -rescued- student body allows for Nightcrawler to teach fencing, Colossus to teach drawing, and showcase what makes the X-Men so great.
