Uncanny X-Men 196 is the issue I always recommend to new readers since it's a self contained story but it's a good introduction to all of the other side stories going on. The main plot is Xavier "overhears" a thought that someone is going to kill him while lecturing at Columbia University. The X-Men have to investigate.

Uncanny X-Men #201 - Storm vs. Cyclops for leadership of the X-Men. Plus: Cable's first appearance.

Uncanny X-Men #268 - Two stories for the price of one. During the present-day, Black Widow enlists Wolverine's help on one of her missions; while the flashback sees the first meeting between Captain America and Logan as they team-up to rescue a little girl from the deadly Hand.

Uncanny X-Men 196 is the issue I always recommend to new readers since it's a self contained story but it's a good introduction to all of the other side stories going on. Such a good one, and great Rachel foreshadowing. I’d also recommend the issue Storm loses her powers, and 193. It’s basically where Claremont started setting up his subplots that would develop into the Mutant Massacre.
