Over the top, beautiful and awesome.
Sieg vs Shirou Amakusa was a beautifully fluid battle too.
Though, this has always been one of my favorite Fate fights overall.

In general, the last five or so episodes of Apocrypha had some amazing fight scenes. Besides the ones already mentioned we also got Achilles vs. Chieron, Achilles vs. Atalanta and Mordred & Kairi vs. Semiramis. It was good stuff.
That reminds me of another of my favourite Fate fights. Though, unlike the others mentioned it doesn't feature fast paced and elaborate coreography. But there's something grand about Gilgamesh vs. Iskander.
Gilgamesh is this supremely confident ancient king who throughout the franchise usually views other people as mongrels, playthings or less. So just him acknowleding the laid back world conquerer that is Iskander as an opponent worthy enough to get serious against. Which turns the fight into a complete curbstomp instead of the fun epic showdown between an infinite army and an infinite armory that Iskander had hoped for. But he kept on struggling until the end and was fully acknowledged by the King of Heroes.
It's stuck with me.
One of the most fun clock up moments in Kabuto.
