I will have to say that Coipel costume is my favourite for Thor.
Ultimate Thor is my biggest blind spot in the MU. Almost all of the Ultimate line happened while I wasn’t reading comics and I haven’t made catching up on them a priority. I am sure I have seen this kind of depiction somewhere and Kirby loves to use simple shapes and designs as shorthand for this kind of thing, so I am sure I didn’t invent the idea.
I prefer the bearded look. Gives him that he's been through some shit and don't mess with him look. The baby face makes him look young and inexperienced.
Nut the current outfit is so bland.
I liked Simonson's battle armour...

If ten years of recording The Young and the Restless for my mother have taught me anything, it's that characters in serial dramas are always happily in love...until they're not

No. I think it is the weakest costume Kirby created and I think the modern interpretations of Thor's costume have all been better.

Yeah, and Simonson waited until Sal Buscema had taken over the art chores before making the switch to the armour.
Kirby had a gift for using basic shapes to create iconic designs, but I do think Thor is one of his more difficult costume designs to make work. It needs a stylised artist to make it work, imo - Kirby and Simonson both are quite cartoony and it looks fine in their hands, but generally I don't like the classic Kirby pudding-bowl helmet. Coipel's design is a great update of the Kirby look.
This was my favorite new costume.
It's got the helmet.
It's got the long hair.
It's got the beard.
It's got the bare arms.
It's got the classic looking hammer.
It's got the traditional large circle motif going on.
It's got some color (and all the right colors, at that)
I didn't like the Coipel look, personally. Too much chainmail for me.
But I have seen a version that kept the chainmail legs and omitted the arms, and with the full beard... I did like that one.

I feel like the last serious attempt to render Kirby's design in a realistic way was probably Ribic in the Loki Mini:
