Not sure why, but I always liked the idea of Illyana and Doug. Perhaps it's because Doug shares some personality traits/interests with Kitty. The dynamic would also be a nice gender role reversal of the traditional hero/damsel trope. Illyana is the aggressive, physical action hero while Doug is the more passive, cerebral supporter.
Lee Forrester has always been my preferred next-best choice for Scott after Jean. I wouldn't have minded seeing him and Colleen Wing give it a go either.
Before Morrison de-aged her, Emma Frost and Xavier. He's one of the few men she could respect as a peer.
Rachel and Alistair Stuart. The goddess and the nerd.
Before he was revealed as gay, Iceman and Boom-Boom. She had a crush on him in early X-Factor, and, while both adults now, they operate on the same level of maturity. Now, I think I'd like to see something more the opposite--Bobby with a guy who's hyper-competent, high-functioning and mature, the level-headed one to Bobby's class clown.
Siryn and Warpath. Jimmy carried that torch for a long time, but he genuinely loved her. She desperately needs that. So does he. I also like the idea of them both being legacy characters.
Bishop and Deathbird. That was wrong in all the right ways.

I always prefer mutant + non-mutant relationships, too --much more interesting.
Regarding the lack of mutant women + non-mutant men, I suspect it has to be with fact that this way the male part would be in inferiority facing the female part. This seems to be no problem the other way around, though.
Two ships come to my mind that would probably have fun sex and great time together. Don't worry, be happy.
