I'm so excited that I have to do what I normally don't do, and wildly speculate about the kinds of missions Cassian could go on. Here are 10 possible missions that would create some cool story and world-building opportunities.
1. Secure the support of a criminal cartel (the Hutts, perhaps?) for a specific job
2. Gather information on a mysterious dark-cloaked and masked enforcer of the Emperor
3. A rare opportunity to assassinate the Emperor which ignites a fierce debate among the militant and less-military elements of the Rebel Alliance
4. A job with Saw Gerrera and his partisans that goes wrong and leads to the Rebellion's break with him
5. Infiltrate a high-level gathering of Imperials on a Core World (Coruscant, etc). Lots of Bond-style antics from Cassian.
6. Gather intelligence about a galactic-scale kyber mining operation on a number of remote worlds
7. Work with Enfys Nest and her pirates to steal and/or blow up some critical fuel and food sources (perhaps on an industrial planet/ system for the former, and an industrial-scale agricultural system/ planet for the latter)
8. Locate a Jedi in-hiding and escort her or him to safety (the mission goes wrong)
9. Support a local Rebellion (ala Ryloth), without inviting the full wrath of the Empire on that planet or system
10. Investigate and identify a new planetary system to house Rebel Alliance HQ, after a security breach renders Dantooine too vulnerable to discovery by the Empire

11. A mission to extract a high level Rebel prisoner from a maximum security Imperial Detention center. To add some further spice to this mission, Cassian encounters and just manages to shut down an Imperial droid; which is taken back to the Rebellion and reprogrammed to become Cassian's faithful companion.
12. A reconnaissance mission to a planet that is being stripped and decimated of its resources - and the information gathered from here is used to help galvanise support for the Rebellion where it pulls at the heart strings of planets and leads them to think that there planet could be next. Again to add some further spice, you could have a high ranking Rebel leader who is secretly playing on both sides of the fence - because the leader benefits in some way from the plundering of these resources. Cassian then has to make the choice in assassinating this leader and having to explains his reasons to Rebel High Command.
13. A mission to attack an Imperial arms and ordnance depot to try and secure heavier weapons and munitions for the Rebellion.
