Learning that someone is as fast as or faster than you are, as skilled as you are and decisively stronger and more durable than you are doesn't actually help you in beating them. Classic Fisk is just out of Cap's league, unless Cap is getting significant plot armor. He's stronger by a fair degree, considerably more durable and every bit as good a fighter.

Putting this another way, Classic Fisk was AT LEAST a match for Daredevil. And Daredevil, by feats, murders Cap. To a degree that isn't fair or funny or particularly close. He's just out of Cap's league. He's significantly faster, more agile, hits just as hard, and is a much better esoteric fighter, with pressure points and the like.
