That's exactly why it shouldn't have been renamed. I wanted to see her react and deal with that. It's a missed little plot opportunity.

It no longer matters. Teen Jean actually ATTENDED the school, and adult Jean now has those memories.

Even in AVX, Jean tells Scott to tell Logan that she likes the new name of the school.

I like to think that Logan and Ororo would ask her to be Headmistress or something. Then she would be like "Well, then I have to change it back to Xavier", but they would convince her to keep it as Jean Grey, because having the actual Jean Grey as the face and headmistress of the Jean Grey school would work better in terms of like, her being the poster child for mutant issues and making a difference lol.

Thats obvious considering Rosenberg wrote that. Im not sure how he will tie those together as Scott didnt see Jean in her waitress outfit when he was briefly resurrected and we never got to see the interaction between Jean and the Phoenix created Scott that the first issue ended on.

I think either this is either

1 - A flashback to Scott's life on the "Phoenix Resurrection world".

2 - Just a random waitress that looks like Jean. Scott's face on those middle panels makes me thinks he's like "Wait, Jean? ...Oh Nvm ".

I think the Phoenix is trying to right some wrongs by resurrecting Scott.
