By the way I think that canonically Jean's eyes are green but there are many artists who paint them blue, the same goes for Scott who vary a lot between blue and brown.

Scott's eyes are always brown. Jean's are always Green. Anyone who draws otherwise simply didn't do their homework.

True, but it goes beyond that to simply not caring. They know they need to get these details correct. They also know that fans are going to see this. They just do not care. For example, Scott's eyes could be any color for someone who does not know, while a redhead like Jean could have brown eyes.

True, I think they're going to repeat what happened with Jeen.
Jean is supposed to stay with Bishop after the event, Jean have forgive Scott for the whole thing with Emma but this Jean doesn't know the story or anything, what better way to make her stay with Bishop and not with Scott than remind her of the bad times of her marriage?
