Honestly, XtAS struck gold with its line up - I’d stick with that
My idea would be an updated approach to the Animated Series, with the original cast in-tact. The first several episodes would be glimpses of where each character is at in their lives. It would also allow for episodes later on that focus on major Marvel events that have happened since the cartoon went off the air. Civil War, Vampires/Shogo for Jubilee, Storm marrying Black Panther, Jean/Cyclops/Wolverine dying but coming back to life. Gambit and Rogue getting married. It would have more of a teen/adult feel with updated animation and some different voices. Focusing on the original cast, it would allow other characters to be introduced (Gen X, New X-Men, etc...) first in the background and smaller roles, but expand in flash-back episodes. This would open up more recognition of who they are when they are highlighted in present-day settings.
I know this is a large cast... but each few episodes that focus on what’s been going on with our core team could be considered a mini-movie of sorts until the audience is caught up.

Scott, Ororo, Logan, Piotr, Kurt, Kitty and Rogue.
meh, if i pick a small team its just gonna be the few must pick characters that we always get. So i Say start the carton with a mansion full of mutants. Maybe 20 X-men + Xavier and bunch of annoying kids in training running around. Some characters like Wolverine get more shine then others but characters that are needed for whatever mission will get screen time.

I know it's a kind of large cast, but emphasis on each character would ebb and flow as necessary and it covers all of the bases.

The roster will be the exact same one from the MCU movie.
The agreement also provides Disney with the opportunity to reunite the X-MEN with the Marvel family under one roof and create richer, more complex worlds of inter-related characters and stories that audiences have shown they love. It only makes sense for Marvel to be supervised by one entity. There shouldn't be two Marvels.
