Most people seemed to have a distaste for the "Spider-Totem" storyline in JMS Spider-Man, and it's not hard to see why. Even people who did like it often said that it could've been executed better.
That being said, "Immortal Hulk" seems to have mostly favorable reviews despite being very far out of the norm for a Hulk story.
What makes "Immortal Hulk" a better change in genre than "JMS Spider-Man"?

The Spider-Totem is actually well liked at least the first 13 issues with it, and parts of it are accepted and used in later stories, especially the Spider-Verse stories.

Horror (particularly body horror) and the weird/supernatural have always been part of Hulk comics, at least at the periphery. Ewing just brought that to the forefront for a sustained period of time.
Also Ewing knows his stuff. Dude constantly makes call backs to Hulk's history, and builds on that rather than simply retconning everything to fit a story.

The Immortal Hulk has been gradually bringing in a lot of Hulk lore, especially the last few issues. There's still definitely a lot of "smashing" going around still as well in addition to the horror elements.

How is the Immortal Hulk? This is my first time hearing about it, but the idea of Hulk having a horror direction is interesting. last I read of Hulk was Aaron's run, and I really wasn't a fan of that.

I think that in long-running serialized fiction the ability to function or adapt to differing tones/genres is helpful for a character or book's longevity. These books have a tendency to grow stale over time. Taking a Science Fiction story, and introducing horror elements may be jarring. But it can put a stop to creative ruts, and introduce new elements/opportunities for the series to grow.
Continuity, even in a "shared" comics universe is often insignificant if not largely detrimental to the quality of a comic.
