Fight one: movie versions (Troy) no ranged bow for Legolas, he has his sword from thr Hobbit though

Fight two: Legolas just has his twin knives

Fight three: Myth Achilles vs Book Legolas

By mythic, do you mean the Achilles from Homer's story or folklore? Because they are very different. Homer's version was basically a sword-n-sandles version of Karate Kid. He wasn't invulnerable, but he was even more over-the-top insanely skilled than the movie version. Folklore Achilles is a low-end version of Juggernaut: invulnerable except for his heel.

    Achilles cannot deal with this....

I feel like Legolas is still too quick, resourceful and agile for Achilles to deal with

Fight three: Myth Achilles vs Book Legolas
Legolas was a bit of a wussy in the book no?
