Speaking of Star Trek :
Think what you want of Voyager but damn, that's a Star Trek theme right there.
Every Star Trek show should have opening lines. It doesn't always have to be "Space: the Final Froniter..." but there should be something. This is the thing that got me jazzed for each episode. When I watch on DVD now, I never skip that part. It's like the opening crawl for Star Wars. Its a feature that the franchise owns as its signature--I don't understand why some shows dropped that device.

As for non-animated stuff: ER, Psych, and Scrubs would at or near the top of my list.

Since I don't believe either one of my actual favorites has been mentioned so far...
- The initial/"Classic Coke" run of Elvira's Movie Macabre. They could easily(and understandably) have just gone with Cassandra in costume. Instead, they went with the "Maximum 'The Cure' Goth" hallway atmosphere/the theme song/the sound effects/the wolf howl. It's still great every single time.
- In an incredibly close second, the opening of Thundarr The Barbarian. That intro is easily better than entire episodes of some shows that I can think of. It's like Heavy Metal and Jack Kirby for the "Grade School" set.
