My personal favorite would be What If...? (Vol.2) #26, because it was written by Kurt Busiek.

Definitely Mr. & Mrs. Williams (Simon & Wanda) from What If...? (Vol.2) #5

...but with a happy ending for the married couple, if possible.

This right here. Iron Rick, Iron Wasp and Iron Giant-Man were awesome. Hank fighting the Hulk was classic. Hank landed some haymakers.

Plus What if the Hulk went Berserk. The FF4, Thor and the original Iron Man all battle a berserk Hulk. This turned out very different than it ever would in 616.

Maybe it's not exactly my favorite, but one I have the fondest memory of is the first one I picked up as a teen, issue #82 from Volume 2, "What if J.Jonah adopted Peter Parker?", which results from a major screw-up in the part of the Chameleon during a public shuttle launch results in a explosion that kills himself, John Jameson inside the shuttle, and Aunt May in the audience, all in front of Peter and Jonah.
Thinking back, it had a lot of good twists to the status quo, some of which I won't spoil here, and after reflecting more on it, maybe this is my person favorite issue after-all.
