I tend to ignore the JLaw version of her. If I do that, I really enjoy Mystique. A wild card. The crazy one. In this case we have two. Her and Daken.

The first is more or less my go to for a dream team and while I prefer Jean Grey over Emma Frost, including Scott, Logan and Jean in one active book is not something I'm sure I could stomach. Upon review I added Gambit to avoid any Rogue/Magneto shipping wars which was not at all intended. Plus it adds in a stealthy character

The second team has been one that's leaped out at me since Excalibur #1. Specifically a team built around Storm and (pseudo High Priest) Apocalypse. Her choosing a team who he couldn't easily dominate and who also wouldn't immediately try and obliterate him. That means no Summers, no Wolverine, and no Archangel (Probably shouldn't include Polaris but I like her and she fits too well with the others).

It must be rather difficult to put together an X team that people are actually interested in that doesn’t include Storm.

I'm with you on that. Movie Mystique and Comic Mystique feel like 2 different characters to me
