Possibly because now we're in a different Multiverse, different story and continuity.
Every time DC reboot, the Metaverse adjusted to preserve Superman, and the story follows.
So even if the Final Crisis happened in the history of Rebirth, then it didn't happen the same way as Post Crisis. No idea how exactly that works though.

Original monitors exist in all universes why would it exist post-crisis after it ceased to exist while in Crisis.
For the same reason Doomsday and Bane keep cropping up. DC once made a bucket off them and hopes it will sustain.
Realistically: Snyder wanted to use everything. (And even then, at least Nix Uotan survived FC).
In universe: Someone has to try and keeps tas on the current mess.
