In agreement with you about Ian Churchill. Those were great times to be a fan of the "satellite" X-titles.
However, let's not forget the artist who preceded Churchill...
Steve Skroce
After becoming the regular artist for X-Man, Skroce drawing Cable again sort of felt like a homecoming.
Strong. Enjoyed Skroce too. There’s a great pinup he did during his Wolverine run with classic Cable versus classic Logan. Wish I could find it.
Who would people say are his top 3 arch nemesis? For me its
1. Stryfe
2. Apocalypse
3. Bishop
Unfortunately I would agree. His rogues gallery is pretty bare, especially with Apocalypse now being on the Krakoan Quiet Council and Bishop is back on the side of the angels with that episode of his life forgotten. So Stryfe is really his only major nemesis, though he's had solid run ins and has history with Bastion, Post and Holocaust. So a case could be made for them as Cable nemeses. There have also been a couple of characters created specifically to be Cable nemeses that never really took off, like Sinsear from his first solo series early on as well as Conquest and that techno-organic creature from his more recent series. And don't forget Gideon, Crule and the rest of the Externals. Oh, and G.W. Bridge and Department K. Garrison Kane.

Cable has a Rogues galley that can include his son Tyler, his clone Stryfe, and his mother Madelyn.
There’s also Sanctuary (Tanya Trask) actively working against him.
That costume and overall aesthetic looked terrible.
