Hello Storm17. It's from "X-Men the Wedding Album". It was a one-shot that focused on Jean Grey and Jubilee.
Just in case anyone wants to find it and read it, I'll give a description in spoilers.

It's a story that has Jean Grey getting things ready for her soon-to-arrive wedding. While she's doing that, she's being kept company by Jubilee, who is not impressed with the concept of marriage.
When Jean's dress arrives, she goes downstairs and tells Jubilee to look through the boxes to find stuff she wants. In her searching, Jubilee finds Jean's diary, and (being Jubilee) opens it and reads it. Through reading the diary, Jubilee learns how Jean was found by the professor, her training, her falling in love with Scott, her attraction to Wolverine and other things.
When Jean returns, Jubilee confesses to what she did, and then tells Jean she never had the chance to hear about how her parents met, fell in love, married, and had her. Now, through the diary, she has a better outlook on love and marriage.
Since the main focus is on Jean and Jubilee, both Storm and Bobby only appear on one page each, no neither really figure into the story much.

Archangel watches from above as Officer Charlotte Jones discovers the body of the Morlock Wings,
then saves her from a gang of crackheads before flying off, fighting the urge to kill the criminals.
As he leaves, Sabretooth, watching from a nearby rooftop, shoots him down with an assault rifle.
Meanwhile, Scott, Jean, Hank and Trish Tilby are on a double date when the restaurant is attacked by giant cockroaches.
Meannwhile, Opal arrives at work and drops off dinner for Mole, who is still hiding in the basement of the music store.
On a snowy rooftop, Sabretooth checks the fallen Archangel, but gets his face slashed by Archangel's wings.
At the restaurant, Cyclops, Marvel Girl and Beast battle the massive bugs, finding it all familiar,
as Bobby, babysitting Christopher, arrives at the music store where Opal works.
Smitten with Opal, who's angry at Ship for blocking the sunlight from her apartment, he asks her out.
Elsewhere, Archangel and Sabretooth continue to fight, with Sabretooth gutting Archangel.
At the restaurant, Marvel Girl heads to the roof, where she discovers
the Locust coordinating the attack, and she & Beast quickly defeat him.
At Power Records,
Opal and Bobby leave on their date,
followed by Mole, who fears for Opal's safety with Sabretooth on the loose.
Elsewhere, Sabretooth taunts Archangel, telling him he laced his claws with a nerve poison, but Archangel
manages to lash out with his wings, gutting Sabretooth as well, and the pair collapse into the bloody snow.

Caliban attacks Archangel, who is wounded after his fight with Sabretooth.
Elsewhere, Marvel Girl and Cyclops go for a romantic walk in the park.
Meanwhile, Bobby and Opal Tanaka try to go out for dinner, but the restaurant Bobby has chosen is closed.
As they head to Opal’s apartment to eat in, they are followed by Mole, the Morlock.
While not far away, Caliban and Archangel battle on a New York rooftop,
with Archangel being seriously injured.
Elsewhere, Cyclops proposes to Marvel Girl.
During their stroll to Opal's apartment, Nathan Christopher’s stroller suddenly spots Mole,
who accidentally phases through a crane and topples steel beams onto Bobby and Opal.
Bobby saves them with an ice barrier.
Finally, the fight between Archangel and Caliban ends after they fall to the streets below.
A triumphant Caliban leaves Archangel in the care of Officer Jones.
Elsewhere, Bobby angrily encases Mole in ice.
Opal asks Bobby to release Mole, as he is her friend.
Meanwhile, Marvel Girl troubled by Phoenix and Madelyne’s memories, turns Cyclops down.
Elsewhere, Opal and Bobby continue to her apartment and Mole
returns to the sewers where Sabretooth is waiting for him.

Well he does change his form when he becomes organic ice or whatever. In this way, Colossus also changes form and shape when he becomes metal.
Iceman's powers are versatile because there are numerous applications to his ice abilities including making himself bulkier, have spikes of ice, etc. I liked it when Iceman bulked up in his ice form or had spikes as hair (the spikey head look I don't like so much).
I've been re-reading a lot of 90's X-men (Gold Team era and beyond) and I enjoyed all the Iceman parts. I also recently reread the Astonishing X-men run where his powers were out of control. I also read some Defenders, Champions, and the first Iceman mini. I think I've read a good junk of his appearances but I'm not an expert level like I am with Grey.
