The airport fight scene in Captain America Civil War was fun for me. All these scenes seem pretty great to me.
Always said Pitt should've done more action.
Another scene I watched constantly back in the day. Loved this fight from Fist of Legend. I believe it's what inspired the Wachowskis to make the Matrix:

Out of Bond, there's the Red Grant fight already mentioned, but also:
Bond vs. Sandor in Spy Who Loved Me (Roger Moore was generally poor in most of the fight scenes compared to the others but this one was pretty good)
Bond vs 006/Alec in Goldeneye. One interesting detail that's missed in part because of the way it's framed is that Bond pretty much badly damages Alec's gun arm so he's actually holding it up with his other. You can kind of see more of it when Bond kicks the latter but a better view is available in some screen shots.
The sword fight in Die Another Day. Although the rest of the film is more ridiculous, this is actually pretty well done and was even used in the RLM reviews of the Star Wars prequels as to make a sword fight more exciting than the over choreographed ones from the prequels.

One favorite of mine is the Gundam EZ8 vs Gouf Custom from Gundam 08th Ms team (1996). The Gouf is a ground type mobile suit featured in Gundam's "One Year War" stuff usually, designed mainly for melee ground combat. One gives Amuro Ray a hard time in the original series, although many of it's weapons are built in which are a bit of a weakness.
The Gouf Custom gets rid of that weakness as it has the same weapons but they are mostly removable or streamlined. It has an electric wire, an arm cannon, a sword and a big gattling gun clipped to it's shield. It's piloted by Norris Packard, one of those many pilots in the series who generally disagrees with the war's politics and corrupt leadership but relishes the battle anyway. Plus he's the Guardian of Aina, the love interest in the series, and is doing this in part to keep her safe.
It defeats, outmanuevers or incapacitates the team and the Guntanks they are protecting (in pretty graphic fashion-One Guntank's oil splashing looks like blood) and also fights the EZ8, briefly overpowering it before Shiro, in a rage and out of ammo, low on power and other weapons, pulls off this move.
Shiro manages to also throw Norris off guard when he reveals that he's the one who's in love with Aina. Shiro eventually cuts Norris down but not before he scores one final hit on the last Guntank.

Daredevil season 1 had some great stuff. In the hallway or in the rain on the parking lot.
Been rewatching a lot of the Matrix Reloaded scenes. Upon first watching them, I remember thinking they seemed a little fake, a little too "wire fu." However, watching them now, I see the beauty. While I appreciate the hard-hitting, realistic stuff, I miss these beautiful, fanciful fight scenes.

In terms of The Matrix's opposite, John Wick 4's fight scenes have more realistic and modern elements. Heavy breathing, fatigue, BJJ, it's amazing the difference 20 years can do:
