Scenario 1: Melee weapons only.
Scenario : Magic allowed.
We’ll presume Cap doesn’t have a gun.

Does a motorcycle count as a melee weapon for Cap?
And I’m assuming we’re not counting Mjolnir.
Cap seems considerably stronger, at least as fast, and... maybe more agile. On the other hand, with Cap only having his shield, there's at least a chance Geralt can get a decisive hit in, so probably like, 8-9/10 for Cap? Magic probably isn't going to change much unless Geralt ends up in a situation where he can fire one of those force blasts directly into Cap's chest at point blank range.

I agree with BitVyper.
Geralt is a bit of a challenge for Cap but he's not anything he hasn't faced down before. Also, Cap is stupidly difficult to keep down.
Yeah, I agree with others here.
Aside from maaaybe speed, Cap has ever physical advantage. You can argue Geralt's magic plays a big part, but honestly it likely doesn't. Cap has straight up survived direct shots to the torso from Ultron's gravity pulse thingy.
