A better question would be what remains of the New 52 to be erased...
Superman and Wonder Woman's runs from 2011 to 2016 have already been retconned out of existence, for instance. Aquaman, I guess, retains most of his recent history, but with the timeline stating that Tula became Aquagirl and then was killed, it seems bound to change, I guess ?
Yeah! Probably, they are going to stream line things and take a page out superman's original origin and morrison's origin. You know

The ones we know they're keeping as written in the 4G timeline are The Court of Owls, Wally, and Bart's return, Wonder Woman becoming God of War and retiring, Superman acquiring New 52 armor and discarding it, the Superfamily went into hiding when Jon was born and then returning as Jon gets his powers, BatCat not-wedding, Dark Nights Metal, Hell on Earth... I forget the rest.

The first New 52 Teen Titans series has also been erased - the Superboy and Kid Flash from that team never existed (presumably the 2003-2011 team now lasted a little longer). The second New 52 team still seems to be mostly in continuity though (at least, Bunker was still a Teen Titan at some point), with the exception of any references to Superboy, Kid Flash, and the origin of Tim Drake (which was reverted back to his original one in Rebirth).
Some pre-Flashpoint Superman stories will be altered to include Jon.
I can see most of Donna Troy's origin stories being erased, reverting back to her pre-Crisis one. New 52 Wonder Woman getting erased already made Donna's Rebirth origin nonsensical before it was even revealed, and it now turns out (revealed in The Infected: Deathbringer) she remembers all of her origins (due to Wally, I wonder?).
Huntress will retroactively have always been black (she was white originally, but reintroduced with dark skin in Grayson).
New 52 Birds of Prey was erased as soon as the Rebirth run started - it was indicated that the team had broken up when Barbara regained the use of her legs and became Batgirl again. In New 52, of course, that had already happened. The pre-Flashpoint status is currently that it happened, but Huntress wasn't involved (Helena supposedly didn't know Barbara and Dinah before the Rebirth run) but the new timeline should fix that.
The Rebirth Superwoman series (starring Lana Lang) appears to have been erased - her origin was connected to New 52 Superman's death, so it had become nonsensical half way through the book's run.

Why is DC continuity such a mess?
Surely the powers that be know it’s hard for people to keep up....
Because the powers that be as far as I can tell didn’t exactly plan everything out or truly make it a full reboot and it lead to a lot of contradiction and confusion. When New 52 happened everything took place over a five year period, some characters were only just beginning to appear but characters like Green Lantern and Batman got to keep most of their full history and thus did not really start over, which is confusing when condensing that things happened in a 5 year period. To make matters worse it was never really clear about certain things such as if Superman has died to Doomsday or if Dick had formed a first Teen Titans or if Tim Drake’s new 52 teen titans was the first team.
In essence they messed up by not going full reboot, because they made reference to events that happened, kept some of that history, and wasn’t sure how some of that history fit in a restructured timeline. Since then they’ve been trying to fit everything back into place as best they can with Rebirth and the upcoming Generations and I guess Death Metal.
