Since this is a boxing match, I think it's less that they can knock him out but they are fast enough to just dodge around him and land hits to get a victory on points.

In a real fight, Hulk presents problems to a number of people Read's list.

Real world boxing point scoring doesn't account for "damage caused".

It is mostly decided on blows landed, clinches, blocks and so on. They don't need hurt Hulk to win.

Boxing is a sport rather than an actual "fight" as it were.

it doesn't always have to be "damage caused". I've seen many a fight where a fighter can look horrible, due to cuts and abrations opening up during a bout, and can still win due to the number of punches landed.

luffy right now is well fast enough to dance around hulk all day and not get touch.

katakuri, given his mastery of haki and his mastery of his DF powers, can just.......stand there and hulk couldn't hit him. but like Luffy, he is fast enough to dance around hulk and not take a hit.

Wouldn't even have to touch him. Just the blowback from his punch would send Hulk out of the ring (unless Hulk developed some new, and otherwise useless power of excreting glue from his feet).

You know what beats punch? Preemptive counter attacks! The MunchKING and his amazing Hamedo skills ought to keep Hulk busy eating the punches instead of giving them as long as Hulk isn't allowed to do anything resembling a special move.

EDIT: I am seriously surprised Hamedo made to Urban Dictionary, and at the time of my posting this, the definition is completely accurate to FFT, and ONLY refers to the FFT power.
