Actually, people (the people that the MCU films are aimed for) does not think anything about "Ultimatum". You still fail to understand that the MCU plays in a much higher league than the comic book fandom, comic book fans are a very low percentage of the MCU audience and their comic book opinions have no weight at all. Case in point: if there is a work that comic book fans usually place in the same league with "Ultimatum", it's "Ultimates 3". And that did not stop the MCU from incorporating the subplot "Hawkeye lost his family and becomes the Punisher" into Endgame, comic book fans be damned.

And if there is a complaint that Infinity War received, it was that the snap was cheap drama, nobody seriously bought the idea that all those dusted guys were dead for good. Ultimatum also killed half the population of the 'Verse... with the key difference that they had the stones to make those deaths stick, and have the setting embrace the consequences of it and move on. There were no magical stones to roll things back.

Yes, they did it all in the IW-Endgame films. Would they do it again? Of course! Why not? Endgame is the highest-grossing film ever made, why not try to repeat it? After all, the great MCU success before it was "The Avengers" and it was soon followed by the Guardians of the Galaxy, and it has been pointed that it reuses all the Avengers' character archetypes.
