Writers don't always use the rhyming. But the Demon series from the 80's used it a lot/
I think restorative nostalgia is the number one issue with comic book fans.
A fine distinction between two types of Nostalgia:

Reflective Nostalgia allows us to savor our memories but accepts that they are in the past
Restorative Nostalgia pushes back against the here and now, keeping us stuck trying to relive our glory days.

He appears again nd rhymes in The most recent DCAU film(Apokolips war i think its called). In JL unlimited he only says his iconic rhyme to turn into Etrigan but then talks normal once he is etrigan.

The bad rhyming is why I despise the character. The Demon has had so much cringe worthy dialogue over the past few decades. It's best in small doses.

The rhyming is tied to Jason’s power

Jack Kirbyís original Demon series didnít use the rhyming besides the incantation to charge Jason into Etrigan (and vice versa). Alan Moore made Etrigan speak only in rhymes during his appearance in Swamp Thing and most writers have made that the standard way he speaks. I love The Demon but I really prefer him to only occasionally rhyme. It can sound really forced and detracts from the character.

    Actually, the incantation is:

Gone! Gone! The form of man
    Rise the demon Etrigan!!

Sometimes, the full poem is used (as in Demon #1):

Change! Change! O form of man!
Release the might from fleshy mire!
Boil the blood in heart of fire!
Gone! Gone! The form of man
    Rise the demon Etrigan!!

and there are variants of above that were used.

Even though Alan Moore gets the credit for making Etrigan rhyme all the time, I believe it was Len Wein in DC Comics Presents #66 who did it first.
