T-1000 can destroy the metal skeleton part of the Rev-9 but after that point, I guess it becomes a stalemate since the Rev also has a liquid aspect to him as well.

although, I'm not sure of the durability of the Rev 9s physical skeleton. How strong was it?

After a dam turbine crushed him over and over to the point it overloaded and exploded on top of it (after it had gone through a full fight, hell the full movie chase sequence against Arnienator, Sarah and company), Rev had enough fight left that even if its ability to fully reassemble was heavily compromised, shotgun shots merely slowed it down.

The liquid part of rev-9 seemed to be weaker then the T-1000 at least.

I thinl rev-9 would take it. He can duplicate himself it's 2v1 at that point.

He also seemed to be weaker wean he split up so not sure that's going to be the thing that gives him the win.

No, it needed specific computers to do that. It can't hack T-1000, but the T-1000 can hack the Rev-9's Terminator body.

Can the liquid Rev do things with its body like turning limbs into swords and so on?

Yes it can it just didn't seem as strong as the T1000 or as dureeable with out it's other half.

Is it possible for T1000 to possibly just destroy the regular body with his bladed weapons? Maybe he can just turn his fingers into picks and poke out the endoskeleton's eyes, preventing it from seeing?

Uhhh... the movie did use the tactic of poking it in the eye/head to take it out.

Just with you know the mini-reactor thingie that was capable of frying 2 Terminators at once (3 if you count Rev's other half). And only after the above mentioned overwhelmed turbine exploded on Rev. And an original Terminator model still needed to pin him in place while the pulse explosion started taking both of them out.

In Genisys the T-1000 dropped some of itself into a broken T-101 and made it into its servant.
