Close fight imo.
Thanos is more skilled and likely more durable.
Hulk has the advantage of size, speed and healing.
Strength is probably pretty close...

Bana takes even longer to rage/grow with strength ( he has impressive stuff, like the tank toss and falling from f 16 into the bay and tunneling to surface latter.)
But Bana Hulk, in combat terms fights brings purely by brute force and some improvise weaponry. He can heal yes, but it was large grade military weapons that actually bled him in the first place.
And as mentioned he seemed to be slower to get rage as when he raged gained body mass. Reflexes both Movie Hulks are good though ( Bana with Missile, the one Thanos best did the catch a bullet in his mouth at short distance. A mentioned feat but hints Hulk. Ring fast in that version too.)
Also Thanos is still pretty strong, fast, and knows how to fight. Bana may even bleed him, but I do not see him getting over powered. Rather Thanos after exchanges sees the growing, healing so he strikes in a way to slow him down for a solid head shot or two. But yeah if we have Hulk start off at biggest/max rage.
Thanos may actually lose.
Seems closer to a draw. Arbiter mentioned superior healing for Hulk, but durability seems to favor Thanos. I can't see a (deciding) advantage of one over the other.

The longer the fight gets drawn out, the more likely Bana Hulk is to win as his rage steadily builds.
Eventually, there will come a point where Hulk just overwhelms Thanos as he gradually tires.
