The conventional wisdom here at Rumbles is that Dr. Fate and Dr. Strange are roughly interchangeable in terms of power level. However, Fate has two advantages over Strange that might help him a little here: he has Class 100 strength and invulnerability. Thanos will likely still win, but Fate won't be a glass cannon if his mystic shields get knocked down.

If PC Fate has strength and speed on par with PC Superman, then Fate should win this. I assume PC Fate has telepathic ability/resistance to deal with Thanos' telepathy?
