Can I enjoy this series if I don't collect any of the other X books?
Also was thinking about also picking up Wolverine & Hellions, have they been good so far?

Yeah I think so. There's some tie ins and the crossover coming up but some of the books kind of do their own thing.
Hellions has been surprisingly good and worth picking up.
Yes you can enjoy X-men without reading anything else they are bunch of stand alone stories. You don't even have to pick up other issues to enjoy series.BUT picking up other books does probably give more clarity on little things here and there.
Hellion and Wolverine have been solid I wouldn't have problems recommending them to anyone but honestly they aren't a rush you should read them thing. I would suggest waiting on the trades to get them.
There is an upcoming 22 part crossover involving all the books so mileage may vary in terms of understanding whats going on.
There are a couple of issues of Hickman's X-Men that involve the Brood that you would have more context for if you also read Hickman's New Mutants issues, but it isn't really necessary to read one to understand the the other. The very specific numbering of the upcoming X of Swords crossover makes it seem that reading it in order and totality are strongly suggested, but that could just be a marketing strategy.
Hellions has been great so far.
