For me, my all-time favourite is the Dishonored series.
I will also play just about anything Deus Ex, Resident Evil, Tomb Raider, and Saints Row.

That, and the ability to play it multiple ways. Also helps that the characters and locations are varied and interesting.
While in the Elder Scrolls you have multiple options for play - the characters tend to be too bland for my taste (though I do play those games too).
Nah, those games are whacky fun. Changed-up between entries too, kept it fresh.
Arkham series, Gta series, Mafia Series(Excluding Mafia 3), Mafia Definite Edition brought back life in this franchise, i hope they will involve czech developers in mafia 4.
Genuinely love the first Onimusha. I didn't get to play the other games but Onimusha: Warlords made me a fan and I'd love to see a new game or a remaster or remake of the others.

I was a fan of Jak and Daxter as a kid. I was a fan of DMC and Kingdom hearts but I lost interest in both recently.
I liked FF but I haven't played many yet. I liked the new God of War game but I don't care about the old ones.
Mainly Metal Gear Solid, although the lack of any substantial games apart from the Metal Gear Solid 3 Pachislot and the Survive spinoff for quite a while since Kojima's departure hasn't been great (although they still put out occasional merchandise).
Got hooked up on Assasins's Creed lately (It does have a few similarities to MGS, the whole stealth/conspiracy angle although far less military hardware!). In part because I'm a bit of a history buff.
I like Fallout but couldn't really get that much into 76.
Also have enjoyed Uncharted, and it's "sister series" Last of Us.
Final Fantasy + Red Dead Redemption are also pretty good, although there seem to be a lot of gaps in development time with the games (Although there's plenty of FF spinoffs out there).

Almost forgot; The Dynasty/Samurai Warriors games (and some of the spinoffs). Simple hack and slash, but still fun.
Except for DW 9. That was awful. You literally have to go across China in order to unlock locations. Unlike other open world games, its mostly empty between towns and storylines.
I really have to add Zelda.
I played almost all of them save for the ones on Wii and a couple on Gameboy. (like 4 swords and the oracle ones.)
Pretty solid franchise. And Breath of the Wild is still my all time favorite video game.
