Totally forgot about that scene, but agreed it really catches who Superman is. It's like the scene in Man of Steel where he flies for the first time - it's just fun to watch Superman really enjoy being Superman, having fun with his powers. There was none of that in Batman v Superman, which helped hurt it among other things. Even going back to Clark running home from school and racing that train in Superman the Movie, you need to show him having some fun. The character works best when he's just a good, fun, happy guy at heart.
Not necessarily his greatest rescue, but speaking about Superman the Movie I always loved the scene where he first saves Lois in that helicopter. Nice meet cute.
