Oh dear, this goes extremely poorly for Sokka.

Quite apart from her much more battle-hardened swordplay, her feats of being able to apparently routinely beat the shit out of Alex Louis Armstrong with impunity and generally being a highly experienced solider, Olivier will probably just intimidate him with a stern look.

Surprisingly, I think Olivier would come to respect Sokka -- in her own way and on her own terms, of course. Olivier and Sokka have a great deal in common (e.g., both are non-superpowered humans surrounded by superpowered beings and entities). In a story setting, I could see Olivier coming to rely on Sokka -- assuming she hadn't already killed him.

For reference, Olivier Armstrong managed to bury her sword deep in Sloth's head. The very same Sloth that could shrug off gunfire and tank rounds.

I would totally be down for a story where Sokka starts out as a meek new recruit at Fort Briggs but gradually adapts to the harsh climate and the tough culture, while at the same time endearing himself to Olivier and her men through his ingenuity and generally being hilarious.

Sokka should not get underestimated, he is a super human weapons fighter just like Olivier, with a very impressive sword depending on when the fight happens:

I said swords only. The one image you have of him using a sword shows him to be extremely outclassed.

There is a feat for the sword in 1 of the gifs, and i would say his durability, reactions, and now by me newly added strength feat still apply to a swords only fight. But you are right that Zuko extremely outclassed Sokka, that is part of my reasoning why i think that Olivier would win the fight.

Sokka: Well, for various normal person reasons I wasn't able to skin him so we became best friends instead. And to make up for not completing my task I've put together some idea for steampunk weaponry for Codlesworth here. *pulls out schematics for a steampunk bear armor*

Olivier: ...Codlesworth?

Sokka: Yeah, I had to call him something.

Olivier: ...I am conflicted. You've clearly failed the task, but I do like the idea of having a bear in my crew.

Problem is, his style of sword fighting is... not gonna play very well into Olivier. The strength disparity is also pretty severe, so if Sokka tries to block? She'll overpower him.
