Probably X-Men Unlimited #1 and Uncanny #201, sometime in '93, for me.

These two. I picked them both up at the same time from a Waldenbooks (or B. Dalton?) in the mall, strictly because I liked the covers, and they made absolutely no sense to 8 yr old me. I finally found a LCS in my area by the time of the big relaunch, and added Uncanny #281 and X-Men #1 to to my pull list. They made... a little more sense?
Had to be X-Men 10, because I remember discovering both the team and Ka-Zar at the same time. That was a lucky trip to the grocery store!
Uncanny X-men 248 (volume 1) First issue with Jim Lee. I had no idea who any of these people were besides Wolverine and I had to go back and read about them!
Classic X-men was the other. I don’t recall the issue number. When they were being held by the Hellfire Club during the Dark Phoenix Saga. The back up story was also drawn by Jim Lee!

If we want to count Wolverine's series, the first X-men comic I ever read was Wolverine #73.
But if you want an actual comic that has X-men in the title, it was probably Uncanny #305. My memory is a bit fuzzy on that one.

I was a kid with impetigo and had to keep my feet in a bucket of water, my dad bought me Human Fly #1 and Xmen #168 one i read halfway and put down(but still have) the other i have re-read dozens of times of the years.
