Qui-Gon seemed a bit more unorthodox while Obi-Wan was often more by-the-book (although occasionally he did improvise himself). He might've given Anakin a bit more freedom. Then again, Obi-Wan pretty much knew something was up with Anakin and Padme, but didn't really bother to reign him in.

I think the idea is he knew there was something, just not that they were actually married.
I'm reading Brotherhood (one of the latest novels) and he also tried to keep some distance from it because it reminded him of his connection to Satine.
I think Qui-Gon and Anakin would have shared a true mentor-mentee or father-son relationship whereas Obi-wan Anakin shared a big brother-little brother type relationship. It is heavily implied in different media both canon and legends, that Anakin never truly respected Obi-wan as a mentor, and thus when they butted heads he often defied Obi-wan or at least ignored his instructions. Sadly, Palpatine filled the father role for Anakin who both admired and respected Palpatine unlike Obi-wan who he admired but didn't respect. I think if Qui-Gon would have been around Palpatine would have had a much harder time becoming Anakin's surrogate father.

Eh, I don't think it's a power creep just an example of technology evolving. You just sort of have to accept that the fight with Obi-Wan in A New Hope looks the way it does because of the constraints of the tools available to the filmaker at the time rather than it being a "true" representation of fighting at the time. One could attempt to rationalize why Jedi went from wuxia inspired ariel combat in the prequels to shuffling around like kids on the play ground if you want, but the real life reason of George Lucas having neither the budget or technology neccesary to produce a fantastical fight scene nor the directoral acumin to hire a better fight choreographer works better for me.

IMO, Star Wars has always been for kids, even if only the ones inside us. It did begin as a nostalgia fest for those remembering the Matinee Serials.
Or, we can head-canon it away as Vader playing with Obi-Wan ("Your powers are weak, old man."). The same excuse works for why he didn't simply yank the Rebels out of the ether at Yavin: He was having too much fun doing it old school right up until Han Solo snuck up on him, whilst he was fixated on that X-Wing piloted by somebody strong in the force.
