Some of these mutants were literally born yesterday through the resurrection protocols! I think it would be an interesting aspect of mutant culture if they really do change their date of birth.

I can definitely see some of them doing this. But I have to wonder if we would've seen an example of this by now.
Then again, the legalities of people who come back from the dead in the MU have always been a bit fishy.
I think it should be a personal choice by each individual.

They may have anniversaries for significant deaths and rebirth but I think replacing the original birthday would feel silly. Unless the mutant rejects their pre rebirth identity.
It's simple really , instead of saying date of birth the required fields are simply renamed 'Date of first birth' .That date won't change no matter what happens afterward.
With death and aging becoming irrelevant in the Age of Krakoa, so too should birthdays follow suit.
Mutants should continue shaping their unique culture, including holidays.
Sovereignty Celebration (Krakoa becoming a nation).
The Crucible. (Ceremonial Combat)
The Hellfire Gala / Mars Day (Mars colonization annual party and X-Men election)
ETC
Speaking of this, I'm wondering how resurrected mutants count their ages, especially those who have been dead awhile. It would make sense to me if they stopped the clock with their age at death, but some of them have also clearly been reborn in younger bodies. I guess maybe it just doesn't matter anymore.
