As gargantuan as this book would be, I'd still probably buy it. Maybe omit Shadowdragon and Sovereign Seven, as I don't think DC has the rights anymore (I could be wrong though).
I'd like to see collections of early 90's annuals as well, my favorite being Eclipso: The Darkness Within.

Spider-Man by Roger Stern WITHOUT the Spectacular issues. Include O'Neill and do 208-251 maybe. Then do DeFalco from 252-292.
Actually I would like them to re-do the Amazing and X-Men omnibii; have ASM breakdown into three volumes as 1-40, 41-82, 83-122. And X-Men as 94-143, 144-200, and 201-246.

I want to see an Omnibus of the Charlton Comics Action Heroes that reprints the two DC archives from way back. They are out of print and really expensive.
