At first I thought of Worlds Unknown #2 - https://www.comics.org/issue/26461 but there's nothing about the flu in that story.
What country were you in at the time, and was the story in color or black & white? That will help narrow down the possibilities.

The search could hard because, as you probably know, there was a famous Ray Bradbury story about time-traveling dinosaur hunters that change the future, which was the origin of the "butterfly effect." This story was adapted and inspired many comic book stories, including probably the one you're looking for.

I’ve read Xenozoic Tales (a long time ago so please don’t rely fully on what I’m about to say)...and I’m 80 percent sure it couldn’t be that because I think artwork was black and white, and the storyline was one in which dinosaurs had re-appeared in modern world setting rather than humans going into distant past.
If it's 1970s it might have been Flesh by Pat Mills, which ran in 2000 AD. Time traveling cowboys farming dinosaurs for meat. I dunno about bird flu though.
