It won't affect story progression. It can affect gameplay depending on the game. For example, in the Persona games the bond you built carries over into gameplay by having your lover shield you from damage, knock you out of a status effect, making it easier to build baton pass for team combos, etc.

Given he and Colossus regularly fight demons via Excalibur I figure they're ideal. Plus you know, he looks like one. Psylocke might be a good pick too. I also forgot Morbius on my list.

Dani Moonstar and Wolfsbane would make a good pick for a New Mutants team. Kitty Pryde (with Lockheed), Captain Britain and Meggan for more Excalibur members. Pixie would be a great fan favorite.

I think they'll be more distinctive than AIM were in Avengers. We also have Sabretooth confirmed so there's a mix of team villains planned.

the graphics are kinda shaky for a console game, but gameplay looks interesting
