I ask because AFAIK, only the animated series has officially labeled Jean becoming Phoenix, the Shi'ar/Starjammers stuff, and Phoenix healing the M'Kraan Crystal as "The Phoenix Saga".

With how many reprints, trades, omnibus, etc they released, they probably did. For one they recently released a big Phoenix omnibus with both what you mention, DPS, Classic X-Men backstories and maybe more.
At the end of the day I think it's still more of a fan thing since it's not just one focused ongoing storyline happening regularly in all the issues like Dark Phoenix. It's just one of the plots in Claremont's X-Men. There's a whole bunch of plots and arcs on those issues that have nothing to do with the Phoenix. And before Dark Phoenix happened the things that had were mostly just a new identity and character development for Jean

The Phoenix Saga (X-Men 101-108) is the first part of The Dark Phoenix Saga, which is divided into two parts. The first part (The Phoenix Saga is where Jean Grey comes upon the Phoenix Force and the repair of the M'Kraan Crystal.
