As for why Jean felt relief "after blowing Arishem's thumb off," I think you have a point, that is, she certainly felt relief due to "successfully averting another situation where billions of people would have perished." However, I also think she felt a subconscious sense of redemption, i.e., perhaps she felt, in some way, she made up for her crime as Dark Phoenix. However, as for why she distanced herself from Madelyne and Phoenix when the truth had already been revealed to her, she was still in a state of denial and dissociation, both running themes in her story.
Now, a tangent of my own: Frankly, as someone who has grappled with abuse, trauma, and addiction, this is why I am so drawn to Jean as a character: In pivotal moments, her story has been defined by trauma (her best friend's death, her own deaths, her transformation into Phoenix, the perpetrations of Mesmero, Mastermind, and Sinister), abuse (again, the perpetrations of the aforementioned), and addiction (her initial responses to her own power after becoming Phoenix and her hunger for escape after breaking free from Mastermind's abuse and control, which prompted her transformation into Dark Phoenix). As I see it, these facets of her story have often compelled her to deny the truth and dissociate herself from her various "incarnations," which, to me, make her utterly compelling, especially because she has nevertheless and often chosen the path of selflessness both to put others before herself and to right her wrongs.
Earlier today, I was think-drafting a Twitter thread about self-sacrifice being one of Jean's core characteristics. During her prepubescence, she nearly died trying to psychically protect her dying best friend, which is when her telepathy manifested. Later, as a young woman, she knowingly risked her life by piloting a space shuttle through a solar flare to save her team, which led to her transformation into Phoenix. Afterward, while grappling with trauma as Dark Phoenix, she killed herself to save the world and perhaps the cosmos. Not long after her return from stasis, she surrendered her soul to Mephisto to save Madelyne and Nathan, whom he had killed but brought back due to Jean’s sacrifice. (He would go on to refer to her soul as "rare and wondrous.") Finally, as White Phoenix, when she could have easily reincarnated and returned to Earth, she chose to do Phoenix work instead, and dissipated Scott's guilt (over cheating on her) and grief (due to her "death") so that he would enter into a relationship with Emma and ensure the survival of mutants and humans alike. I mean...
